Ingredients

Main ingredients
  • 1 cup uncooked brown rice
  • 1 head broccoli, cut into florets
  • 1 14-ounce can white beans, rinsed and drained
Cheese sauce
  • 3 tablespoons butter
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 6 tablespoons almond meal
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup broth as needed
Topping
  • crushed almonds for topping
  • sliced green onions for topping

Method

Preparation
  1. Cook the brown rice according to the package directions.
  2. Bring enough water to cover the broccoli to a boil in a small pot. Add the broccoli florets, cook for 1 minute or until bright green, then remove from heat. Drain and place the broccoli in very cold water to stop the cooking process.
  3. Chop the cooked broccoli into small pieces while keeping a few larger florets for texture.
Cooking
  1. Melt the butter in a deep pot. Add the garlic and sauté for about 1 minute until fragrant.
  2. Add the almond meal and salt, then cook for 2-3 minutes until the mixture becomes thick and clumpy.
  3. Gradually add the milk, whisking after each addition to smooth the mixture. Simmer until the sauce thickens slightly.
  4. Stir in half of the shredded cheddar cheese until melted.
Assembly
  1. Combine the chopped broccoli, cooked rice, white beans, and additional broth or milk as needed with the cheese sauce. Stir until evenly combined.
  2. Sprinkle the remaining cheese over the mixture and cover the pan until the cheese melts.
  3. Finish with crushed almonds and sliced green onions, then adjust seasoning with additional salt and pepper if needed.

Notes

Keep a few larger broccoli florets when chopping to add more texture to the finished broccoli cheese rice.
