Ingredients

Breading
  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup panko breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • salt and pepper, to taste
Chicken and Sauce
  • 2 tablespoons oil
  • 4 chicken breasts (about 1 pound)
  • 1 1/2 cups tomato sauce
  • 4 slices fresh mozzarella cheese
Zucchini Noodles
  • 2 zucchinis

Method

Preparation
  1. Preheat the oven to 425°F (218°C). In a shallow dish, combine the whole wheat breadcrumbs, panko breadcrumbs, Parmesan cheese, Italian herbs, salt, and pepper.
  2. Heat the oil in a medium ovenproof skillet over medium heat.
  3. Cut the chicken breasts into four pieces, lightly flatten them if desired, and coat each piece evenly with the breadcrumb mixture.
Cooking
  1. Place the coated chicken in the hot skillet and cook for 3-4 minutes per side until the exterior is browned. The chicken will finish cooking in the oven.
  2. Transfer the skillet to the oven and bake for 5-10 minutes, or until the chicken is fully cooked.
  3. Add the tomato sauce over the chicken and place one slice of mozzarella on each piece. Return the skillet to the oven for a few more minutes until the cheese is bubbling and lightly browned.
Serving
  1. Cut the zucchini into thin shreds or make zucchini noodles with a spiralizer. Serve the chicken and sauce over the fresh zucchini noodles and finish with Parmesan and parsley.

Notes

Lightly flattening the chicken pieces can help them cook more evenly and maintain a crisp breadcrumb coating.
