Ingredients

Sauce
  • 1/4 cup sesame paste (or tahini)
  • 1/4 cup warm water
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, grated
  • Sriracha and sugar, to taste
Noodle Bowls
  • 6-8 oz / 225 g stir fry noodles, Chinese egg noodles, or linguine
  • 2 cups edamame, cooked
  • 2 cucumbers, diced
  • 1 lb. chicken breast, cooked and diced (optional: see notes)
  • Sesame seeds

Method

Preparation
  1. Combine the sesame paste, warm water, soy sauce, sesame oil, rice vinegar, garlic, sriracha, and sugar in a bowl. Whisk until the sauce is smooth, or blend or shake in a sealed container until combined.
Cooking
  1. Cook the noodles for a few minutes less than the package directions recommend. If the noodles become sticky, rinse them under cold water.
  2. Coat the cooked noodles with about half of the sesame sauce.
Assembly
  1. Divide the noodles, edamame, cucumber, and chicken among containers.
  2. Add a small drizzle of the remaining sauce and finish with sesame seeds.

Notes

For the ideal chicken method, cut a pound of chicken breasts into bite-sized pieces, coat with olive oil, salt, pepper, and garlic powder, then bake at 425°F (218°C) for 15 minutes. For more browning, transfer the baked chicken to a skillet with extra sesame sauce and cook until the outside becomes browned and roasted.
