Ingredients

  • 3/4 cup olive oil
  • 1/4 cup water
  • 2 tablespoons white vinegar
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 clove garlic
  • black pepper, as needed
  • fresh herbs, optional (see notes)
  • fresh lemon, optional (see notes)

Method

Preparation
  1. Add all ingredients to a blender or food processor and blend until the sauce is smooth and creamy.
  2. Serve the sauce with roasted vegetables, salads, meal prep dishes, or other foods as desired.

Notes

For a pantry-friendly version, keep the base recipe without fresh herbs and lemon, then add fresh lemon when available for extra brightness. Fresh herbs can also be blended in when desired; parsley or basil work well for Italian-style meals, and cilantro suits Mexican-inspired meals. Store the sauce in a jar in the refrigerator for about one week. If it separates, shake it again before using. If the oil firms up in the refrigerator, allow the jar to sit at room temperature briefly or run it under warm water before shaking. If the sauce becomes too thick, add a little more water.
