Ingredients

  • 2 tablespoons butter
  • 1 pound sirloin steak
  • 35-40 oz / 1135 g vodka sauce (about 1 1/2 jars)
  • 2-3 large zucchini (or regular pasta)

Method

Preparation
  1. Cut the steak into bite-sized pieces. Prepare zucchini noodles by spiralizing or cutting the zucchini into noodles, or cook regular pasta if using.
Cooking
  1. Heat the butter in a large heavy-duty skillet over medium-low heat until lightly browned, taking care not to let it blacken.
  2. Increase the heat and add the steak pieces to the skillet. Leave them undisturbed for about 1 minute to develop a seared surface, then turn and cook another 1-2 minutes until both sides are well seared. Remove the skillet from the heat.
  3. Transfer the steak to a bowl and wipe the skillet with a paper towel to remove excess grease.
  4. Add the vodka sauce to the skillet. Return the steak to the pan and simmer for 5-10 minutes while the zucchini noodles or pasta are prepared.
Serving
  1. Serve the sauce and steak over the prepared zucchini noodles or pasta. Finish with Parmesan and parsley, then serve immediately.

Notes

For the nutrition facts, generic vodka sauce values were used rather than the specific sauce brand values, so results may vary. Zucchini noodles can release moisture after being mixed with sauce, but serving the dish immediately helps prevent excess liquid. Leftovers may have additional moisture; stir the mixture or store the noodles and sauce separately.
