Ingredients

Shrimp Scampi
  • 1 tablespoon olive oil
  • 1 lb. (454 g) raw shrimp, shells and tails removed (see notes)
  • 4 large cloves garlic, minced
  • 1 tablespoon butter (can add more to taste)
  • 2 tablespoons white wine
  • 1/4 cup minced lemon pieces*
Pasta
  • 8 oz / 225 g uncooked capellini noodles
  • a handful of fresh chopped parsley
  • salt and pepper to taste
  • Parmesan cheese for topping

Method

Preparation
  1. Bring a pot of water to a boil for the noodles. Heat olive oil in a small skillet over medium-high heat.
  2. Press excess moisture from the shrimp, especially if previously frozen, and place them in the hot skillet. Cook without moving them for 1-2 minutes, then flip and cook the other side. Season with salt and pepper while they cook.
  3. Once the shrimp are cooked through, remove them from the skillet and set aside.
Cooking
  1. Add the noodles to the boiling water and cook according to the package directions.
  2. Using the same skillet, add garlic and butter while reducing the heat to medium. Sauté for 3 minutes, stirring continuously, until the garlic is soft and fragrant without burning.
  3. Add the wine and simmer for a few minutes until the liquid reduces. Stir in the lemon pieces and sauté for another 1-2 minutes.
  4. Return the shrimp to the skillet briefly to warm through.
Assembly
  1. Drain the noodles and return them to the saucepan. Add the shrimp, lemon, garlic mixture, and fresh parsley, then toss to combine.
  2. Season with salt and pepper as needed and finish with a small amount of Parmesan cheese.

Notes

*If using frozen raw shrimp with shells, remove the shells before cooking. The tails can also be removed for easier eating. For the lemon pieces, use finely chopped lemon with rind or substitute with 1/2 tablespoon lemon juice and a spoonful of zest. Adjust the lemon amount to your preferred level of citrus flavor.
